  1. In a warm pan with olive oil, sauté the vegetables. Add salt and pepper and fry for 10 minutes.
  2. Beat the eggs, add the flour, the Italian herbs, the baking powder and the stevia. Add the vegetables, and in case it is necessary add more salt and pepper to the mix.
  3. Transfer the mixture to pre-greased muffin forms and bake for 25 minutes.
  4. Let them cool before removing them from the forms. Enjoy!
Recipe Notes
  • The veggies in the recipe can be changed for those you have in your fridge. But keep in mind that some might have more water than others, altering the final result. Some recommended variations are olives, spinach, asparagus, sweet corn and any type of onion.
  • They are freezable and can be stored in an air tight container inside the fridge for a couple of days.
  • These are perfect finger food snacks for children that are beginning with solids (be sure they are ok with all the ingredients you use).
